Wondering how much of a random ingredient or spice to add to your bread? I’ve compiled a list of how much I use in my breads and it should give you a good starting point when building your own recipe.
Note: all amounts are based off of a bread with 500g total flour. Some amounts should be scaled back if you’re combining multiple ingredients into one loaf. Most amounts will be listed in grams but for some small amounts I’ll use teaspoon (TSP) or tablespoon (TBSP) measures.
- Blue cornmeal: 28g
- Caraway Seed: 1 Tbsp (used when making Russian Rye style bread)
- Cheese (cheddar, pepper jack, etc): 60-70g, cubed
- Chia seeds: 50g
- Chopped Walnuts: 100g
- Coconut flour: 50g
- Dried cranberries: 100g
- Flaxmeal (ground flax seed): 50g
- Garlic (chopped): 15g
- Green Chile (chopped): 60g
- Grits (instant): 25g
- Jalapeño (chopped): 60g
- Masa harina: 25g
- Oatmeal: 100g
- Pepitas / Pumpkin seeds: 90g
- Piñon / Pine nuts: 60g
- Quinoa flour: 50g
- Quinoa: 100g, cooked and cooled (about 1/2 cup)
- Raisins: 100g
- Red Chile powder: 1 tsp
- Rosemary: 1.5g (leaves of 2 sprigs)
- Sliced almonds: 60g
- Sun dried tomatoes (stored in oil): 45g
- Sunflower seeds: 90g
- Sweet potato: 100g (cooked, mashed and cooled)
- Turmeric Powder: 1 1/2 Tsp
- Wheat bran: 30g
- Wild rice (cooked): 80g (about 1/2 cup)
Combining ingredients
Some of these ingredients go really well together in a loaf of bread. When combining some ingredients you’ll need to scale down how much to use. Here are some of my favorite combinations
- Dried cranberries and walnuts
- 100g chopped walnuts
- 35g dried cranberries
- Turmeric powder and slivered almonds
- 1 1/2 tsp turmeric powder
- 60g slivered almonds
- Green Chile or Jalapeño and cheese
- 75g green chile
- 75g cheese, pepper jack or cheddar (shredded or cubed into 1/4″ pieces)
- Pepitas and sunflower seeds
- 25g sunflower seeds
- 25g pepitas
- 25g quick oats
- Masa harina and grits
- 25g masa harina
- 50g grits (cooked in 230g water for 4 minutes in microwave)
- Garlic and sun dried tomatoes
- 15g pressed/chopped garlic
- 45g sun dried tomatoes in olive oil (diced up)
